In 1965, Jack and Jamie Davies founded Schramsberg and set out to make world-class sparkling wine in the true méthode traditionelle style on the property originally established in 1862 by German immigrant Jacob Schram. There were only 22 bonded wineries in Napa Valley and fewer than 100 acres of California vineyards planted to Chardonnay and Pinot Noir. Schramsberg was the first California winery to provide a Blanc de Blancs in 1965 followed by a Blanc de Noirs in 1967. Now their son, Hugh Davies, leads the winery’s management and winemaking team.

J. Schram Blancs —2014
Originally released as their “J. Schram”, with the 2013 vintage this bottling was renamed “J. Schram Blancs” to denote this wine’s Chardonnay-based core. From the inception of Schramsberg’s efforts in 1965, the winery has sought to achieve the greatest elegance and individuality possible in their sparkling wines. J. Schram Blancs epitomizes Schramsberg’s philosophy to create a wine in which no effort has been spared and no care has been omitted. Representing only 2-3% of the winery’s annual production, the Chardonnay-focused J. Schram Blancs blend is assembled from the very best base wine lots of the approximately 300 produced each year. This special bottling is dedicated to Schramsberg’s founder, Jacob Schram.
Cluster samples from over 115 cool-climate vineyard sources are pulled several times before the optimal pick date for each block is selected. Complexity within the wine is gained through both oak barrel and stainless steel tank fermentation. Additional layers are provided through small lots that undergo malolactic fermentation in barrel, enriching aromas and infusing creaminess on the palate. Their J. Schram Blancs is aged for eight years on the yeast in Schramsberg’s historic Diamond Mountain caves; each bottle is then riddled by hand and finished with an exceptional brut dosage.
The 2014 J. Schram Blancs opens with vivid aromas of Meyer lemon, nectarine, golden apple, and poached pear, combined with nuances of Belgian waffle and vanilla cake. The juicy palate features broad elements of rich baked citrus, dried pineapple, and apple strudel, layered with marzipan and ginger. A bright, long finish is driven by a backbone of generous, fruitful acidity.
Schram Blancs is quite appealing on its own as an apéritif or enjoyed with fresh shellfish, caviar on toast point, smoked salmon, sharp cheeses, seafood brochettes, cedar-planked lobster, mesquite-grilled quail, or Serrano ham and porcini risotto.

J. Schram Noirs—2013
2013 was the inaugural vintage of this bottling named “J. Schram Noirs” to denote this wine’s Pinot Noir-based core. J. Schram Noirs is Schramsberg’s top Pinot Noir-focused brut sparkling wine. Representing 2% of their annual production, this richly flavored and full-bodied sparkler is made from only the finest base-wine lots produced each year. They released this finished sparkling wine nearly nine years after the grapes are harvested, yet this fruitful and dry, toasty and creamy bubbly will age gracefully for decades to come.
Though primarily Pinot Noir, small amounts of select Chardonnay lots are added to the blend to lend additional backbone and length to the palate. Distinct barrel and malolactic fermented lots are also layered in to provide viscosity and depth. Each bottle is aged in contact with its yeast in their historic Diamond Mountain hillside caves for eight years, affording the development of seasoned, roasted and caramelized richness. The yeast is then removed and a finishing dosage, determined through extensive and comprehensive trials, is added to fine-tune the wine’s balance of flavor and structure.
Pale salmon in the glass, this wine exudes aromas and flavors of lemon, lime, white strawberries, and just-ripe white nectarines along with classic lees aromas of freshly baked bread and pastry dough. The palate has a consistently fine-bubbled mousse and an elevated acidity that keeps the fresh fruits forward whilst always maintaining the depth, complexity and layers of developed flavors.
Schram Noirs is well-suited with a main course, such as fruit-stuffed veal, pork tenderloin, roast duck with mango, cedar-plank grilled salmon, and curried chicken salad. This flavorful sparkling wine can also be served as an apéritif with smoked oysters, caviar and such hard cheeses as aged Swiss Sbrinz, Sonoma Vella Jack, or Irish Coolea.
