As children growing up in Beirut, Georges, Daniel, and their sisters, Marie Jo and Michelle, fell in love with the rural way of life during visits to their grandfather’s ancient olive groves. Their childhood was steeped in Lebanese traditions of generous hospitality, family values, and faith. But in 1973, their world was turned upside down. A missile, fired to begin the Lebanese civil war, struck the sidewalk in front of the Daou family home sending shrapnel tearing through the house. For two years, the family rebuilt and recovered from serious injuries, but when the war escalated in 1975, Joseph and Marie made the courageous and difficult decision to save the family, leave everything behind, and move to France to give their children peace and hope for a brighter future.
The family emigrated to Paris and, later, Cannes in the south of France. In France, Joseph developed a passion for wine, and it was here, surrounded by vineyards and centuries of winemaking tradition, that Georges and Daniel first dreamt of a life in wine.
In the early 1980s, Georges and Daniel moved to California to pursue their American dream. They both enrolled at UC San Diego and studied Electrical Engineering and Computer Engineering. Industrious and driven to succeed, Georges and Daniel followed in their family’s entrepreneurial footsteps and started their own company, DAOU Systems, a networking technology company that would revolutionize hospital computer systems.
In 1998, after taking DAOU Systems public, Georges and Daniel sold the company, and a new dream arose, a dream with its roots in France. For years, Daniel had been making wine in his garage in rural San Diego, tending to a one-acre vineyard of Cabernet Sauvignon, and reading every book he could find about winemaking. He knew he was destined to be a winemaker and knew it was time to start a winery. Everyone told him he was crazy, but with Georges as his business partner, Daniel told his father, “I’m going to buy this property in Paso, and I want to become a winemaker, and I think I can make one of the best wines in the world.” Without hesitation, Joseph said, “Go and don’t look back. Go full throttle.” And the rest is history…

Daou Soul of a Lion Cabernet Sauvignon—2019
Each bottle of Soul of a Lion represents a nine-year journey of passionate curation. This journey begins with rare bois rosé French oak barrels whose staves are seasoned in the elements for five years prior to coopering. The wine is then aged for nearly two years in these proprietary Daou 5-Year barrels conceived by Winemaker Daniel Daou. Finally, it is held for extended bottle maturation prior to allocation — ensuring that each vintage has achieved perfection upon release.
Soul of a Lion is the masterwork of Winemaker Daniel Daou, who combines technical innovation with the touch of an artist. The fruit for Soul of a Lion is identified early and reverently tended through harvest. The berries are optically sorted to ensure pure fruit integrity, and the wine is made exclusively from free-run juice. During fermentation, Daniel employs proprietary phenolic management techniques to complement his own sensory expertise. The resulting wine displays a rare trifecta of power, density and elegance.
The 2019 Soul of a Lion is a blockbuster vintage that showcases how Bordeaux varieties are remarkably suited to the terroir of Daou Mountain. This wine explodes from the glass with a kaleidoscope of aromas and flavors, including blackberry, blueberry, black currant, dark cherry, sweet tobacco, and licorice. An added floral dimension imparts an integrated sense of elegance and freshness. While full-bodied with ultra-high phenolic levels, this wine maintains its evenness and poise through an extraordinarily long finish. Patrimony Cabernet Sauvignon—2019
Produced by California royalty Daou Vineyards, Patrimony is a top-of-the-line Cabernet built for the cellar. Absolutely no corners were cut when producing this wine, it is made using old-world techniques like natural fermentation, and new-world technology like optical sorting for selecting only the best fruit.
Patrimony is a must-have wine for any serious California Wine collector. Patrimony is rooted in the unrivaled terroir of Daou Mountain. The phenolics produced on this mountain are known to be among the highest in the world, fostering an immensity of color, depth, and structure. In order to extract the purest and most elevated expression of this terroir, a purposeful omission is required. For this reason, only select vineyard rows are chosen for Patrimony cultivation. By the time the fruit is aggressively thinned, optically sorted, and used only for its free-run juice, a minimal percentage of the total potential yield actually meets the exacting standard we set for Patrimony. Fermentation proceeds exclusively with wild yeasts cultured from Daou Mountain, imbuing the wine with native texture and character.

Patrimony Caves des Lions—2019
Caves des Lions is a blend from a vineyard around the home of one of the Daou brothers. These are the real deal and consistently rank with the finest Bordeaux varieties coming out of California today. It is a California first-growth wine without peer, fulfilling the Adelaida District’s destiny as the benchmark for world-class Bordeaux varieties.
Ink Purple in color, this wine provides the deepest expression of a marriage between Cabernet Sauvignon and Cabernet Franc. At the first sip, the density of this wine strikes you as something ethereal. On the nose, you are mesmerized with scents of rose petels, cigar box, blackberry jam, dark cherries, hibiscus, stone fruit, vanilla and dark chocolate. The tannins are soft and supple with an underlying power that spells elegance throughout the entire tasting experience. The middle palate is balanced and delivers a smooth transition between the attack and the finish. The finish won’t stop while keeping the wine fresh and vibrant.
